Low Fat Lobster Bisque and Red Lobster Cheddar Biscuits

We met some friend for dinner a couple of weeks ago at Bravo in Fairlawn. My salad came with soup so I chose lobster bisque, knowing full well it was a BAZILLION WW points. I had one taste of it and gave it to my husband. My friend Kelley said, “Why don’t you come up with a low cal/low fat lobster bisque?” I gotta tell ya, you would never know the difference. Try it! Low Fat Lobster Bisque 1 cup = 5 points

2 TBSP extra virgin olive oil

1 carrot, sliced thinly

2 stalks celery, chopped

1 leak, sliced thinly

11 oz. of cooked chopped lobster meat, defrosted (I found this at Bay Lobsters in Twinsburg)

4 cups fish stock

1 can fat free evaporated milk

1 cup skim milk

3/4 cup fat free sour cream

1/2 cup fat free cream cheese

1/4 cup chopped fresh parsley

2 cloves garlic, chopped

salt and pepper to taste

splash of white wine

Saute the carrots, celery and leaks in 1 TSP of olive oil. Transfer to blender after about 5 minutes. Add 1/2 cup of fish stock and blend until pureed. In soup pan combine the milks, cream cheese, sour cream, parsley, garlic and salt and pepper. As soon as it comes to a boil, add pureed ingredients from the blender. Boil again, then turn down to simmer. Add cooked lobster meat and a splash of white wine. Pour a glass for yourself…it’s only 3 points!

I served it with my low fat version of Red Lobster’s cheddar bisquits…OMG!!!

Just mix 1 cup of low fat/ heart healthy Bisquick with 1/2 cup fat free cheddar and 1/2 cup skim milk. Drop on greased cookie sheet. Cook for 10 minutes on 450 degrees. Make a dozen.

This beauty came from an abusive home, but I tend to think she doesn’t remember because she’s so gentle and smart! Molly Callahan from the APL tells the story of Diamond and she introduces us to a shy little 2 year old cat named Tiger who’s been at the shelter since September! I’ll take you all through the shelter to show you what’s new this week.

Guilt Free Red Velvet Cupcakes

These red velvet cupcakes are so good and they’re only 4 points each on Weight Watchers!!! My husband won’t let me take them out of the house!

You’ll need:

8 oz. diet Dr. Pepper

1 box red velvet cake mix

sugar free. fat free cheesecake pudding ( 1 oz.)

1 cup fat free milk

fat free whipped topping

red and pink sugar crystals

red raspberries

foil cupcake liners

Mix Dr. Pepper and cake mix for 2 minutes on high. Place foil cupcake liners in muffin pans. Using a ice cream scoop, fill about 1/2 way up. Makes about 14 cupcakes. Bake on 350 degrees for 30 minutes. While baking, mix pudding and milk and let set in refrigerator. Once cupcakes are cooled, layer pudding then whipped topping. Sprinkle with sugar crystals and top with a raspberry. I guarentee, these are the most awesome red velvet cupcakes you’ve ever tasted!!!

Baked Jalepeno Poppers

That’s right, I said “baked”. I love jalepeno poppers, but that deep fried bar food is just not for me anymore. It’s not that I don’t love them, it’s that post 50 lifestyle change. Here’s a healthier version of that recipe for you and we loved them. Just like the onion ring recipe on an earlier blog, you’d never know it wasn’t deep fried! That’s what we had watching the Cavs game tonight.

Baked Jalepeno Poppers

Makes 12 poppers 4 points each – WW

preheat oven to 400 degrees

You’ll need:

8 0z package of fat free cream cheese

1/2 cup fat free cheddar cheese

1/8 tsp pepper

1/4 tsp salt

1/4 cup chopped turkey bacon (cooked)

6 jalepenos cut in half and seeds removed

1 cup bread crumbs

1/2 cup buttermilk

cooking spray

Mix cream cheese, cheddar, pepper, salt and turkey bacon until blended. Stuff cheese mixture into jalepenos. Coat in buttermilk, then bread crumbs. Lay on cookie sheet and spray with cooking spray. Bake on 400 degrees 35-40 minutes.

Uh, oh…someone fell asleep!

Recycle What’s In Your Closet

Being unemployed leaves me with lots of time on my hands. I took the advice of my friend Joe Cronauer and make a list of “things I need to do”. The exception is things I need to do around the house and I must tell you, I am getting organized. I cleaned out my scarf drawer, took some to the consignment shop, some to Goodwill and this one I saved for a table runner. I think it looks pretty snazzy, huh?
